I don’t know what to call this dish? Nutty, veggie rice noodles? That’ll do.
I made a thin omelette and cut it into ribbons. In a wok, I stir-fried lots of garlic, julienned carrots, baby pak soi, spring onions and added some rice noodles.
Now for the sauce! It’s a cheat’s Asian peanut sauce. Use equal amounts of natural peanut butter, sweet chilli sauce, soy sauce and sesame oil; add a little bit of hot water and mix it all together. Pour it over any noodle dish for instant deliciousness!
