We invited some new friends over for a bit of a grown-up’s dinner after the kids were tucked up in bed. Very gezellig! (my fave Dutch word meaning cosy, friendly, warm, fun and lovely – one word!).
I made a spicy, chunky guacamole for everyone to pick at while I cooked. A safe bet. Have you ever met anyone who doesn’t like guacamole?
After visiting my local fishmonger today, I decided on making a fish gumbo. I cooked monkfish, prawns and clams in a sauce made with fennel, onion, chilli, tomato, coriander and fish stock. The result was a rich and spicy stew, warming and really healthy.
Dessert looks like a messy blob, but it took a while to pull together. A bit like beach hair? It looks like you rolled out of bed with it, but it takes ages to get it right. Strange analogy. Apologies. Anyway! I was inspired by an Eton Mess and wanted to make something like it but with different flavours.
This is crumbled meringue, vanilla bean cream and lemon curd all mixed together (all homemade) with shavings of pure bitter chocolate going through it. It was pretty rich, but I think it worked!
The vanilla bean cream is just cream, a little sugar and vanilla bean paste whipped together with a bit of Greek yoghurt stirred through it to lighten the texture and taste.
Everyone has gone home, the kitchen is a bit of a mess… Mañana! Time for bed! Night all✨
